Where it started: J. Arthur's Grill
In December 1985, the Coombes family opened J. Arthur's Grill in downtown Bloomington. That same year, a teenage bus boy named John Bailey showed up for his first shift — quietly learning everything about the restaurant business.
Becoming Malibu Grill
In 1994, the restaurant was reimagined as Malibu Grill — bringing California-inspired energy to a tight-knit Midwestern college town. JB rose from bartender to general manager to managing partner as the restaurant became woven into Bloomington life.
The people who make it home
Long-time staff who know regulars by name work alongside students on their very first restaurant job. That blend of continuity and fresh energy is exactly what gives Malibu Grill its warmth.
A full circle: JB comes home
In 2025, JB purchased Malibu Grill from the Coombes family — completing one of the most remarkable stories in Bloomington dining. The bus boy became the owner, and the restaurant that shaped his life is now his to carry forward.
