In December 1985, the Coombes family opened J. Arthur's Grill in downtown Bloomington. That same year, a teenage bus boy named John Bailey showed up for his first shift — quietly learning everything about the restaurant business.

In 1994, the restaurant was reimagined as Malibu Grill — bringing California-inspired energy to a tight-knit Midwestern college town. JB rose from bartender to general manager to managing partner as the restaurant became woven into Bloomington life.
